What a great food to start the day! This will bring a smile to your face today. It’s crunchy texture and the juicy taste of the chicken is perfect! I learned about this recipe through a friend of mine. She insisted that I gave this a try because she knows that I love salad. I was not wrong in trying this recipe. It is a complete meal that has all the ingredients in it. It has meat and veggies, how awesome could a meal get and the dressing? Oh man, the vinegarette is what makes this salad super delicious. I usually just drizzle a little but feel free to add more. You can never go wrong in putting a lot of it. I hope you all love this recipe
Ingredients:
SALAD INGREDIENTS:
1 (14-ounce) bag coleslaw (or 7 cups shredded cabbage)
2 cups diced or shredded cooked chicken
1 cup loosely-packed chopped cilantro
⅔ cup sliced green onions
⅔ cup sliced or slivered almonds, toasted
½ cup shredded carrots
1 avocado, peeled, pitted, and diced
toasted sesame seeds, for sprinkling.
SESAME VINAIGRETTE INGREDIENTS:
2 tablespoons avocado oil (or olive oil)
2 tablespoons rice vinegar
1 tablespoon low-sodium soy sauce (or tamari)
1 tablespoon maple syrup or honey
1 teaspoon toasted sesame oil
½ teaspoon ground ginger
1 small garlic clove, pressed or minced (or ¼ teaspoon garlic powder)
a few twists of freshly-cracked black pepper
Directions:
TO MAKE THE VINEGARETTE:
Step 1: In a medium mixing bowl, add the avocado oil, rice vinegar, soy sauce, maple syrup, sesame oil, ground ginger, minced garlic, and black pepper. Whisk until well blended.
TO MAKE THE THE SALAD:
Step 1: In a large mixing bowl, add in the chicken, cilantro, coleslaw, almonds, green onions, avocado, and carrots. Toss until well mixed.
Step 2: Drizzle the vinegarette on top. Toss until all the ingredients are coated completely.
Step 3: Sprinkle sesame seeds on top and serve right away. Enjoy!
