I have high expectations from this rhubarb bars because I used to eat this at home. On the weekends, my mom will often go to our local fruit market to buy strawberries, I frequently follow her because I like the scent of fresh fruit and just seeing them makes me want to eat them all.

Ingredients:
For the Crust:
2 cups all-purpose flour
½ cup packed brown sugar
½ tsp ground cinnamon
1 cup unsalted butter
For the Filling:
(4) large eggs
2 cups white sugar
½ cup flour
½ tsp salt
4 cups diced rhubarb
2 cups sliced strawberries
1 cup blueberries
For Crumb Topping:
½ cup flour
½ cup brown sugar, packed
½ cup rolled oats
¼ cup butter, melted
½ tsp ground cinnamon
Directions:
Preheat oven 350 degrees F (175 degrees C). Grease a 13×9-inch baking dish.
Add and mix 2 cups flour, ½ cup brown sugar, and ½ tsp of cinnamon in a bowl. Then cut a cup of unsalted butter into the flour mixture until crumbs form, press into the bottom of the prepared baking dish.
Bake the crust until golden brown in preheated oven for 15 minutes.
Blend eggs, white sugar, ½ cup flour, and salt in a blender until smooth, pour into a large bowl. Then fold rhubarb, strawberries, and blueberries into the blended egg mixture. Spread the fruit mixture onto the baked crust.
Add and mix ½ cup flour, ½ cup brown sugar, oats, melted butter, and ½ tsp of cinnamon in a bowl and then sprinkle over the fruit mixture.
Bake until lightly browned on top, and the filling has set in the preheated oven for 45 to 50 minutes.
