These Lemon Pound Cake Cookies are fast and easy to prepare and are perfect when you need something sweet, but you don’t have much time. Ingredients:
¾ cup white sugar
⅔ cup salted sweet cream butter, softened
2 cups all-purpose flour
2 tsp baking powder
(2) large eggs
2 tsp lemon extract
Directions:
Preheat oven 400 degrees F (200 degrees C).
Cream sugar and butter in a bowl using an electric mixer until light and fluffy. Add and whisk flour and baking powder in a separate bowl, then gradually beat into creamed butter mixture until just combined. Beat eggs, one at a time, into butter-flour mixture until dough is thoroughly mixed and then stir in lemon extract. Then drop small scoops of dough onto a baking sheet.
Bake until cookies spring back when touched for 10 to 12 minutes in the preheated oven.
Note:
For more flavor, you can add a lemon glaze if you want, or even add lemon zest to make the lemon stand out.
