This Smoked Sausage and bake Potatoes are all I’m asking for my entire life. I’ve been searching for a recipe like this, and luckily I’ve found one. Seasoning around here is important to me anyway, so I made a simple seasoning mixture of butter and pepper, oregano, and basil. The sausage and vegetables are filled with olive oil and seasoning. You can add fresh lemon juice that can be squeezed if you want to brighten it all up, then everything is poured onto a sheet plate. If you’ve never tried smoked sausage (of any kind) made from a butcher, then you’re missing out. The taste and flavor smoked sausage are phenomenal.
I serve this during one of our friend’s gathering, and all of them was amazed at how delicious it was, which makes me very proud. Now, they’ve been sending me messages regarding the recipes. Ingredients:
(1) package of sliced Eckrich skinless smoked sausage
8 quartered Yukon gold potatoes
(1) diced green pepper
(1) diced yellow pepper
2 tbsp of butter
1 tsp of oregano
1 tsp of basil
½ tsp of black pepper
2 tsp of olive oil
Directions:
Preheat oven 375 degrees.
Arrange sausage, potatoes, and peppers, add and place the butter over the top in small cubes in the pan. Then add and drizzle with olive oil and season on top. Bake, covered, for 40 to 50 minutes.
Note:
You can add other vegetables you like. For me, sometimes I add carrots because their sweetness pairs nicely with the sausage and other ingredients. Also, you can add a combination of sweet potatoes, cherry tomatoes, zucchini, and squash. Just remember that more tender vegetables like zucchini and tomatoes take less time to cook.
