What better way to start your weekend than waking up by the smell of Apple Fritter Cake? Apple Fritter Cake is an easy loaf cake, reminding you of your favorite apple fritter. This easy dessert will surely make a hit at your table during gatherings and just a snack with your whole family.
Ingredients:
To make the filling, you’ll need:
(1) heaping cup of sliced apples
⅓ cup sugar
¼ tsp cinnamon
small pinch freshly grated nutmeg
2 tbsp cornstarch
2 tsp water
Plus
½ cup brown sugar ( I prefer using ¼ c of dark and light)
½ tsp cinnamon
For the cake, you’ll need:
⅓ cup butter
¾ cup sugar
½ cup applesauce
1 tsp vanilla
(2) eggs
2 ¼ cups flour
1 tsp baking powder
1 tsp baking soda
1 tsp salt
1 tsp cinnamon
1 cup Greek yogurt (you can use plain yogurt as well or sour cream)
To make the glaze, you’ll be needing:
2 cups powdered sugar
1 tsp vanilla
6 tbsp milk
Directions:
For the Filling:
Add and combine apples, sugar, water, cinnamon, and cornstarch in a small saucepan to make your filling. (Make sure to add those sliced, cored and quartered apples, not whole ones)
Cook on low heat for 5 to 7 minutes until the sauce thickens, and the apples are a bit soft, stirring constantly.
Set aside to cool. In a small bowl, add and mix brown sugar and cinnamon until well combined and set aside.
For the Cake:
Preheat oven 350 degrees.
Then grease and flour a 9×13-inch baking dish. Set aside.
Cream butter and sugar until light and fluffy for 3 minutes.
Add applesauce and vanilla, mix until combined.
Add eggs, adding one at a time, then beat well after each addition. (You might want to break the eggs in a separate container to avoid using a bad egg.)
Add and sift dry ingredients together. (The basic rule of pastry is to mix all dry ingredients, and mix all wet ingredients.)
Add and combine dry ingredients to the batter in three parts alternating with the yogurt in two parts, starting and finishing with the dry ingredients.
Beat until just combined.
Spoon half of the batter into the prepared pan.
Then spoon cooled apple mixture over the batter carefully and spread as evenly as possible.
Add and sprinkle ⅔ of brown sugar cinnamon mixture over apples and cover with the rest of the batter.
Then sprinkle the rest of the brown sugar-cinnamon mixture over the top.
Bake it for 45-55 minutes until a toothpick inserted into the center of the cake comes out clean.
For the Glaze:
Make the glaze while baking the cake. In a bowl, add and mix powdered sugar, vanilla, and milk until you achieve the perfect consistency of the glaze.
When you have taken the cake out of the oven, instantly but gently add it to the hot cake and pour it over. (You may need to pick up the cake and tilt it to even the spreading of the glaze. I even poured out some that pooled in the corners and pooled that over the top.)
Let it sit for the glaze to set. Serve, dig in, and enjoy!
