Ingredients:
(1) graham cracker pie crust
1 8 oz. pkg. softened cream cheese
1 tsp vanilla
(1) can of eagle brand sweetened condensed milk. Avoid using a generic brand because it is more watery, and the cheesecake won’t set up the right way.
½ c lemon juice (such as real lemon)
(1) 1 lb. 5 oz. can your favorite pie filling (cherry, strawberry or blueberry)
Directions:
In a mixing bowl, add and beat cream cheese until light and fluffy.
Add and blend in the sweetened condensed milk until well mixed.
Add and stir in lemon juice and vanilla, and then mix until incorporated.
Pour the mixture into the pie crust, and then put inside the fridge and chill for 2 to 3 hours or until firm. Remember, do not freeze the cake.
