One of my favorite times of year is summer. It’s time everybody gets slow and gets together a little. We still try to get everyone together for a great block party, where we fire up the grill and cook some great food at least a couple of times during summer. The Ham and Pineapple Kabobs will be on the menu for the first broad season cookout.
The skewers were easily assembled in less than five minutes, and the grill time wasn’t much longer than that, so fast and easy. You can save the pineapple juice and use it to baste the kabobs as they grill for extra sweetness too. Serve kabobs with a dipping sauce of honey mustard or some other favorite dipping sauce. I made a few smaller ones, which would be great for an appetizer for a group of hearty finger food. It would be a great party food as the kabobs can be cooked in advance for a day or two and cooled until they are ready to grill. It is a great way to make use of leftover ham for a basic main dish or a nice appetizer. So save some leftovers for this fast and easy recipe next time you’ve got ham.

Ingredients:
3 tbsp brown sugar
2 tbsp distilled white vinegar
1 tbsp vegetable oil
1 tsp prepared mustard
¾ pound cooked ham, cut into 1-inch cubes
(1) (15 oz) can pineapple chunks, drained
(4) eaches skewers
Directions:
Preheat the grill at high heat.
Add and mix brown sugar, vinegar, vegetable oil, and mustard in a medium bowl. Thread the ham and pineapple chunks onto the skewers alternately.
Lightly oil the grill grate. In the prepared grill, place the skewers and brush generously with the brown sugar mixture. Cook it for 6 to 8 minutes, turning frequently and basting often. Serve it when heated through and richly glazed.
