When you think of summertime, potato salad is an essential item that is always on the table, especially when serving barbecue food. This classic American potato salad is the perfect recipe that will carry us back for a new serving. A fluffy all-American potato salad, suitable for picnics and summer barbecues. A combination of red boiled potatoes for a delicious side dish, along with hard-boiled eggs, celery, red onions, mayonnaise, light pickle, and mustard.

Ingredients:
2 lbs red boiling potatoes, scrubbed
2 tbsp red wine vinegar
½ tsp salt
½ tsp freshly ground black pepper
(3) hard-cooked eggs
(1) small celery stalk
¼ cup chopped sweet pickle (not relish)
(3) scallions
2 tbsp chopped fresh parsley
½ cup mayonnaise
2 tbsp Dijon-style mustard
Directions:
Add and place the potatoes in a pot, filled with water. Bring to a boil, cover, and cook until a thin-bladed paring knife or metal skewer inserted into a potato can be removed without any resistance, for 25 to 30 minutes. Rinse under cold water, drain and drain again. Let it cool slightly.
Cut the warm potatoes with a serrated knife into ¾ “dice. In a bowl, lay them in, season with vinegar, salt, and pepper as you go. Cut the eggs, celery, and pickle in ¼ “dice and slice the scallions thinly. Add potatoes and parsley to taste. Stir in mayonnaise and mustard until it is blended. Let it chill, cover, before serving.

Most potato salads are made with low-starch red boiling potatoes, and taste better. You can use any size of this variety for Classic American-style potato salad but cook the small new potatoes 10 to 15 minutes faster than the larger ones. Choose potatoes that, if possible, are all about the same size, so they cook at the same time.
