Ingredients
2 tsp Italian seasoning
3 cloves garlic, pressed
2 tbsp olive oil
2 pork tenderloins (about 2 lbs total)
1 ¼ c. water, divided
2 tbsp soy sauce
1 tsp kosher salt
½ tsp black pepper
2 tbsp cornstarch
½ c. light brown sugar, packed
¼ c. balsamic vinegar
How to make Instant Pot Pork Tenderloin
Step 1: Place the salt, pepper, and Italian seasoning in a small bowl. Mix well until blended. Over the tenderloins, rub the olive oil and sprinkle with the seasoning mix.
Step 2: To saute, set the pressure cooker. To the pot, add the pressed garlic and tenderloins. Cook the meat, turning every 1 to 2 minutes until brown (cook time is 6 minutes). Set the meat aside.
Step 3: Pour 1 c water into the pot. Deglaze the pot using a wooden spoon to remove the browned bits from the bottom of the pot while still in saute mode. Then, press the cancel button.
Step 4: To the pot, add the soy sauce along with the brown sugar and balsamic vinegar. Stir well, then return the pork tenderloins to the pot.
Step 5: Cover and seal the lid. Set to cook for 10 minutes at High pressure.
Step 6: Do a natural release of pressure for 10 minutes once the time is up. After 10 minutes, turn the valve to venting, then do a quick release of pressure. Take the lid off and transfer the pork to a cutting board.
Step 7: Turn the Instant Pot back to Saute function.
Step 8: Combine the cornstarch with the rest of the ¼ c cold water in a small bowl. Pour this into the pot and cook for approximately 2 minutes, stirring until bubbly and thick.
Step 9: After slicing the pork tenderloin, drizzle it with the balsamic glaze. Serve immediately. Enjoy!
Note:
Make sure the internal temperature of the pork reaches at least 145 degrees F to ensure it is done. I use a meat thermometer to check it.
