Easily make this Chicken Parmesan in your Instant Pot for a fuss-free dinner that your family will ask for over and over again! Serve this scrumptious chicken meal over spaghetti. For a light meal, enjoy this with roasted vegetables like asparagus, broccoli, cauliflower, or a mix of vegetables.
Ingredients
2 large boneless, skinless chicken breasts
2 tablespoons olive oil
4 garlic cloves, pressed
1 ½ c. marinara sauce
½ tablespoon fresh minced basil
3 tablespoons grated Parmesan cheese
1 c. shredded Mozzarella cheese
1 tablespoon fresh minced basil
salt
cracked black pepper
How to make Instant Pot Chicken Parmesan
Step 1: In half, width-wise, slice large chicken breasts to make 4 thin chicken breast halves. With salt and pepper, season all sides of the chicken.
Step 2: To saute, set the Instant Pot and allow it to heat through.
Step 3: To the pot, drizzle in some olive oil. Lay the chicken breasts halves and cook until the bottom side begins to brown. Flip and cook the other side. Set the chicken aside when done.
Step 4: Saute the garlic in the pot until aromatic. Pour in the marinara sauce. Add the basil and stir. Let everything heat through. Then, turn the saute off.
Step 5: Into the pot, return the chicken and place them in the center of the sauce.
Step 6: Close the lid and seal. Set to cook for 3 minutes on Low pressure.
Step 7: Carefully release the pressure on quick release when done.
Step 8: Over each chicken half, add the mozzarella cheese along with Parmesan and basil.
Step 9: Close the pot, but do not turn the IP on. Let the lid on for 4 to 5 minutes to melt the cheese.
Step 10: Serve the Chicken Parmesan immediately. Enjoy!
Note: For this recipe, I used 2 large chicken breasts. I slice them in half. Or you can use 4 small chicken breasts.
