Ground beef in a hearty tomato sauce is mixed with egg noodles and baked with a generous amount of cheese on top. A simple, hearty meal that can be prepared in large quantities and served to a large group.
This Beef Noodle Casserole has been a regular on our menu rotation. It is a kid-friendly meal that I can up without a fuss in under an hour. And this casserole is the perfect weeknight meal on a busy night!
INGREDIENTS
2 tsp olive oil
1 ¼ pounds lean ground beef – I use 90% lean
12 oz. egg noodles, uncooked
1 onion, finely chopped
2 tsp minced garlic
16 oz. canned tomato sauce
2 tbsp chopped parsley
15 oz. can diced tomatoes, drained – I prefer to use the small diced variety (petite cut)
2 c. shredded cheddar cheese
cooking spray
2 tsp Italian seasoning
salt and pepper to taste
How to make Beef Noodle Casserole
Step 1: Following the package directions, cook the egg noodles.
Step 2: Prepare the oven. Preheat it to 400 degrees F.
Step 3: In the meantime, heat the olive oil in a large pan over medium-high heat. Once hot, add the ground beef and sear for about 4 to 5 minutes, breaking the meat into chunks using a spatula. Next, add the onion and garlic. Continue to cook for another 5 minutes or until the onion is tender and the beef is completely cooked. To taste, season with salt and pepper.
Step 4: To the pan, add the tomato sauce along with the tomatoes and Italian seasoning. Stir well.
Step 5: Once the noodles are done, drain them well and toss them into the beef mixture.
Step 6: Into a greased 9 x 13-inch baking pan, pour the beef and noodles mixture, then sprinkle with cheddar cheese.
Step 7: Place in the preheated oven and bake for about 10 to 15 minutes or until the cheese has melted.
Step 8: Before serving, garnish the casserole with some parsley. Enjoy!
