This delicious and simple creamy lemon butter chicken is prepared in a single saucepan. A simple and tasty dish! The chicken thighs are cooked in a fragrant lemon and garlic cream sauce. Delicious!
INGREDIENTS
3 cloves garlic, minced. or 1.5 teaspoon garlic paste
4 chicken thighs, bone-in, skin-on
1 tsp lemon pepper
3 tbsp salted butter, divided
1 c. heavy cream
½ c. grated Parmesan cheese
½ c. low sodium chicken broth
¼ c. fresh lemon juice
5 oz. baby spinach one bag
1 tsp fresh thyme leaves, plus more for garnish
1 tsp kosher salt, plus more to taste
How to make Lemon Butter Chicken (Creamy)
Step 1: Prepare the oven. Preheat it to 400 degrees F.
Step 2: In a bowl, place the chicken thighs. Add the salt and lemon pepper. Mix well and set aside.
Step 3: Melt 2 tbsp butter in an oven-safe medium/large skillet over medium-high heat.
Step 4: Once the butter has melted, add the chicken to the skillet (skin side down) and cook until golden brown. This takes about 3 to 4 minutes. Turn the chicken to the other side and continue searing. Set the chicken aside when done.
Step 5: On the stove, return the skillet and melt 1 tbsp butter. Deglaze the pan. Then, add the garlic and saute for about 1 to 2 minutes until aromatic.
Step 6: Pour in the chicken broth, then add the heavy cream, Parmesan, lemon juice, and thyme. Stir well and bring the mixture to a boil. Once boiling, decrease the heat to a simmer. Let the sauce simmer for about 5 minutes until thickened.
Step 7: Add the spinach and stir until slightly wilted.
Step 8: Return the chicken to the skillet. Transfer the skillet to the preheated oven and bake the dish for about 25 minutes or until the internal temperature of the chicken reaches 165 degrees F.
Step 9: Remove from the oven when done and serve the creamy Lemon Butter Chicken right away over rice, pasta, or mashed potatoes. This dish is also great by itself. If desired, garnish with some lemon slices and fresh thyme. Enjoy!
