The Roux, chicken, andouille, and Cajun seasoning in this gumbo make for a hearty and satisfying meal perfect your everyone!
Ingredients
½ c. peanut oil or vegetable oil
1 lb chicken thighs chopped – or use chicken breast
Salt and pepper to taste (I use 1 tsp each)
1 tsp olive oil
12 oz. Andouille sliced into ¼-inch slices
½ c. flour
1 medium onion, chopped
1 medium celery stalk, chopped
1 medium bell pepper, chopped
3 cloves garlic, chopped
2 tbsp Cajun seasoning or more to taste
4 tbsp chopped parsley + more for serving
1 tbsp filé powder or to taste (optional)
6 c. chicken stock
3 bay leaves
1 c. okra (for this, I used frozen okra)
For Serving: Cooked white rice (optional)
How to make Cajun Chicken and Sausage Gumbo
Step 1: To medium, heat the pan. Then, drizzle in 1 tsp olive oil.
Step 2: With salt and pepper, season the chicken. Add the chicken to the hot oil along with the sliced andouille. Cook for a few minutes on each side until brown. Set aside when done.
Step 3: In a large pot, heat half a cup of peanut oil over medium heat. Then, stir in the flour and cook for about 20 to 30 minutes, stirring constantly until the Roux is brown like chocolate.
Step 4: Then, add the peppers, onion, celery, and garlic. Stir well and continue to cook for another 5 minutes. Return the chicken and andouille to the pot. Stir and cook for another minute.
Step 5: To the pot, add the okra along with the Cajun seasoning and chicken stock. Deglaze the pan. Then, add the bay leaves and cook for about 1 hour over medium-low heat. If desired, let everything simmer a bit longer. Adjust the seasoning according to taste.
Step 6: Add the parsley. Stir and cook for additional 5 minutes.
Step 7: Take the pot off the heat and whisk in the file powder (optional).
Step 8: Into a bowl, ladle the gumbo and serve over white rice. If desired, garnish with extra parsley. Enjoy!
Notes:
This Gumbo is mild. If desired, you can whip up homemade spicy Cajun seasoning blends.
Add in cayenne powder or a hotter chili powder if you prefer a spicier version. Spicy chili flakes are also a good option. For some additional zest factor, you can also add spicier chili peppers with bell peppers.
