My prime rib roast is slow-roasted to perfection and is a holiday staple. This quick rib roast dish uses only four ingredients and requires little to no preparation. It will truly “wow” everyone!
INGREDIENTS
2 tablespoons Olive oil
8 pounds Prime Rib Roast
2 teaspoons black pepper, freshly ground
1 tablespoon Kosher salt or sea salt
How to make Slow Roasted Prime Rib
Step 1: A day before planning on cooking the roast, season all sides with 1 tbsp kosher salt. Then, keep it in the fridge overnight.
Step 2: Prepare the oven. Preheat it to 200 degrees F. On a roasting pan, place the prime rib roast. Drizzle 2 tbsp olive oil over the roast and sprinkle with 1 to 2 tsp freshly cracked black pepper. Rub them all over the roast.
Step 3: In the preheated oven, place the roasting pan and bake the roast for about 4 hours (depending on the size of the roast) until the internal temperature of the roast reaches 120 degrees F for medium-rare.
Step 4: Cover the roast with foil and let it rest for at least 20 minutes.
Step 5: Adjust the oven temperature to 500 degrees F.
Step 6: After at least 20 minutes, remove the foil and return the roast to the oven.
Step 7: Resume baking the roast for another 10 to 15 minutes until the outside of the roast is browned and crisp.
Step 8: On a cutting board, transfer the roast and allow it to rest for at least 15 minutes.
Step 9: Serve and enjoy!
NOTES:
To ensure the Prime Rib is done perfectly, always use a meat thermometer.
Unwrap the beef and set it in the fridge the night before roasting the prime rib. To allow the surface moisture to evaporate, keep the prime rib uncovered on the sheet pan with a rack. This also ensures a wonderful brown crust when seared.
To ensure an evenly roasted prime rib, place the beef on a sheet pan three hours before roasting and keep it at room temperature.
Before carving, allow the prime rib to rest for at least 15 to 20 minutes.
