Ingredients
Tempura Battered Chicken:
2 tbsp canola oil
1 lb chicken thighs, boneless-skinless and cut into 1” pieces
2 egg whites
1 c. all-purpose flour, sifted
1 c. water ice cold
½ c. cornstarch
1 tsp baking powder
Sauce:
1 tbsp oil
canola oil for frying
3 green onions, sliced thinly, tip to tail not including the root
3 cloves garlic, minced
½ tsp crushed red pepper
½ c. Thai sweet chili sauce
Optional Garnishes:
minced green onions
white sesame seeds
How to make Asian Sweet Chili Chicken
Step 1: In a large bowl, place the batter ingredients and mix well until just combined.
Step 2: In a frying pan, pour in the oil deep enough to fry the chicken.
Step 3: Drain the batter from the chicken using a slotted spoon, then sliced the chicken into the pan. After the crust begins to form, break the chicken apart and cook for about 4 to 5 minutes or until golden brown.
Step 5: After cooking the last batch of the chicken, discard almost all the oil, leaving only a few tbsp in the pan. Then, add the garlic along with the green onions. Saute for about 20 to 30 seconds over medium heat.
Step 6: Return the chicken to the pan and pour the sweet chili sauce on top. Sprinkle with crushed red pepper. Toss well.
Step 7: Serve this crispy and savory Asian Sweet Chili Chicken right away garnished with green onions and sesame seeds. Enjoy!
