Ingredients
1 c. jarred mild salsa
1 oz. packet taco seasoning (or about 3 ½ tbsp homemade taco seasoning)
1 lb ground beef
2 c. water
8 oz. uncooked rotini pasta
Optional toppings – chopped tomatoes (avocado, crushed tortilla chips, chopped cilantro)
1 ½ c. shredded Mexican-style cheese
½ tsp salt
Pinch of black pepper
HOW TO MAKE ONE-POT CHEESY TACO PASTA
Step 1: Place a large deep skillet on the stove and heat over medium heat. Once hot, add the ground beef and sprinkle with salt and pepper. Cook the meat while stirring often until completely cooked. Then, drain the excess grease.
Step 2: Into the ground beef, add the taco seasoning followed by the water, salsa, and pasta noodles. Stir well until blended.
Step 3: Bring everything to a boil. Stir well. Put the lid on and decrease the heat to a simmer. Continue to cook for additional 15 minutes or until the pasta is tender.
Step 4: Turn the heat off and whisk in the cheese. If needed, season with more salt and pepper.
Step 5: Serve the cheesy taco pasta immediately with optional toppings such as topped tomatoes, avocado, crushed tortilla chips, chopped cilantro, etc. Enjoy!
