This Mexican-style and gluten-free cheesy fajita chicken bake is super easy to make and ready in under an hour. Succulent chicken seasoned perfectly with Mexican spices and topped with bell peppers and pepper jack cheese, then roasted in the oven until done. This delicious cheesy fajita chicken bake is an absolutely easy and great dinner option that your entire family will love and ask for over and over again!
Ingredients
4 chicken breasts (use 4 thin chicken breasts, or use 2 large chicken breasts, sliced in half, horizontally)
1 tbsp olive oil
¼ tsp paprika
1 green bell pepper, small, thinly sliced
1 yellow bell pepper, small, thinly sliced
1 red bell pepper, small, thinly sliced
1 c. pepper jack cheese (Monterey cheese), torn
¼ tsp chili powder
¼ tsp ground cumin
¼ tsp salt
How to make Cheesy Fajita Chicken Bake
Step 1: Prepare the oven. Preheat it to 400 degrees F.
Step 2: Using olive oil, grease the bottom of the casserole dish. For this recipe, I used a 13 x 9 x 4-inch deep oval casserole.
Step 3: To the prepared casserole dish, add the chicken breasts (you can use 4 thin chicken breasts or 2 large sliced in half horizontally to make 4 thin chicken breasts). Sprinkle the chicken breasts with salt.
Step 4: Combine the rest of the spices (chili powder, cumin, paprika) until well mixed. Over the chicken, evenly sprinkle half of the mixture.
Step 5: On top of the chicken, place the sliced bell peppers in a single layer and sprinkle with the remaining seasoning mixture. Then, place the torn pepper jack cheese (or Monterey cheese) on top.
Step 6: Place in the preheated oven and bake for about 20 to 30 minutes, uncovered, until the chicken is completely cooked and no longer pink in the middle. Note that the cooking time varies depending on the thickness of the chicken breasts.
