Ingredients
¼ c. of Olive Oil
1 Medium Onion, sliced
2 lbs of Flank Steak
2 c. of Broccoli
1 Red Pepper, cut into cubes
2 lbs of Small Red Potatoes
4 Cloves of Garlic, finely chopped
Salt and Pepper to taste
1-2 tbsp of ground cumin
1 tbsp of dried oregano
How to make Sheet Pan Flank Steak with Garlic Roasted Potatoes
Step 1: Prepare the oven. Set to broil mode (High). Grease a sheet pan with cooking spray or olive oil.
Step 2: In a pot with lightly salted water, boil the potatoes for about 20 minutes.
Step 3: Place 2 cloves of garlic, olive oil, cumin, oregano, and salt and pepper in a large bowl. Mix well until blended. Then, add the broccoli along with the onions, red pepper, and boiled potatoes. To the prepared sheet pan, transfer everything.
Step 4: With salt, pepper, and the remaining garlic, season the flank steak. Then, slice the steak into thin slices before adding it to the sheet pan.
Step 5: In the broiler, place the sheet pan for about 5 to 7 minutes. Then, flip the steak and broil for another 5 to 7 minutes or until cooked to your preferred doneness.
