This Italian dish is an amazing vegetarian pasta loaded with veggies. An easy dinner option that you can throw together in under thirty minutes using just a couple of simple ingredients. This recipe has been my go-to and one of my favorite vegetarian pasta packed with spinach, artichokes, sun-dried tomatoes, capers, garlic, and pine nuts. The combination of flavors will make you droll! The pine nuts add that sweet, buttery flavor that is to die for! And when roasted, the flavor gets intense. Pine nuts also add texture to this already wonderful dish.
This recipe is also very versatile. You can swap some ingredients. If Fusilli is not available, you can use rotini or farfalle instead. Penne pr rigatoni is also a great substitute. Chop up some pitted green olives and use them in place of capers. You can also swap spinach with Swiss chard, arugula, or kale.
I love serving this Fusilli with garlic bread. Either store-bought or homemade. This is also amazing to serve with baguette or olive bread. You can throw together a simple salad like spinach or arugula salad and serve this alongside this delicious Fusilli.
Ingredients
3 cloves garlic, minced
8 ounces of Fusilli pasta
2 tbsp olive oil
¼ c. sun-dried tomatoes, chopped
3 tbsp capers, drained
1 c. artichoke hearts, chopped
5 ounces of spinach fresh
⅓ c. pine nuts toasted
1 tbsp olive oil
How to make Fusilli with Spinach, Artichokes, Sun-Dried Tomatoes
Step 1: Prep the Fusilli. Cook until al dente, then drain when done.
Step 2: Heat 2 tbsp olive oil in a large skillet over medium heat. Once hot, add the minced garlic along with the chopped sun-dried tomatoes, chopped artichokes, and capers. Cook for about 2 minutes, then add the fresh spinach. Continue to cook until the spinach wilts, stirring.
Step 3: Add the cooked Fusilli to the skillet with the sauteed veggies along with 1 tbsp olive oil. Cook further over medium-low heat, stirring. This takes another minute.
Step 4: If needed, add more salt or capers.
Step 5: Serve the Fusilli right away topped with toasted pine nuts. Enjoy!
