I love these baked zucchini fries! Super easy and quick to make using just a couple of pantry ingredients. The zucchini pieces are breaded with almond flour and Parmesan, then baked to crisp and golden perfection. Serve these baked zucchini fries by themselves or with your favorite dipping sauce like marinara or aioli for a delicious side dish or appetizer!

Ingredients
½ c. almond flour, or almond meal
2 egg whites or 1 egg, whisked
2 medium zucchini
½ c. grated Parmesan cheese
1 tsp sea salt
2 tsp Italian seasoning
How to make Baked Zucchini Fries
Step 1: Prepare the oven. Preheat it to 425 degrees F. Using cooking spray, grease a baking sheet. Or just line it with parchment paper.
Step 2: Place the almond flour, Parmesan cheese, Italian seasoning, and salt in a small bowl. Mix well until combined.
Step 3: In half lengthwise, slice each zucchini. Into two pieces, slice each half width-wise. Then, into 4 to 6 fries, slice each piece of zucchini, keeping them at the same size.
Step 4: Into the egg wash, dip a zucchini piece, shaking the excess off. Then, dredge it into the almond flour Parmesan mixture. Onto the prepared baking sheet, place the coated zucchini fry. Do the same with the rest of the zucchini pieces.
Step 5: In the preheated oven, place the baking sheet and bake the zucchini for about 10 minutes. Then, flip the zucchini and continue baking for 10 minutes more or until crisp and golden brown.
Step 6: Take the zucchini fries out of the oven when done and serve them right away on their own or pair them with your preferred dipping sauce. Enjoy!
Note:
You can use nutritional yeast instead of cheese for a dairy-free option.
