Mouthwatering enchiladas filled with chicken and cheese baked on a bed of creamy sauce infused with hot green chiles. This Chicken Enchilada with Creamy Green Chile Sauce is super easy to make, versatile, and one of the enchiladas you’ll ever make!
Ingredients
¾ c. minced onion
3 cooked boneless, skinless chicken breast halves, shredded
vegetable oil for pan-frying
12 oz. shredded Monterey Jack cheese, divided
¼ c. butter
2 c. chicken broth
¼ c. all-purpose flour
1 c. sour cream
12 corn tortillas
½ c. chopped fresh cilantro
1 (4 oz.) can of chopped green chiles, drained
½ c. chopped green onions
How to make Carnitas Enchiladas (Chicken Enchiladas with Creamy Green Chile Sauce)
Step 1: Prepare the oven. Preheat it to 375 degrees F or 190 degrees C. Ready a 9 x 13-inch baking dish. Grease and set aside.
Step 2: In a skillet, heat 2 tbsp oil over medium-high heat. Once hot, fry the tortilla 1 at a time for about 5 seconds per side until soft and pliable. As needed, add more oil to the pan. Between layers of paper towel, drain the tortillas and keep them warm.
Step 3: Among the 12 tortillas, divide the chicken, 10 oz. Monterey jack cheese, and onion. Then, roll up the tortillas one at a time. Into the prepared pan, place the tortillas seam-side down.
Step 4: In a saucepan, melt the butter over medium heat. Once melted, stir in the flour until the mixture starts to boil. Then, gradually add the broth, stirring until thickened. Next, add the sour cream and chiles. Heat through while stirring often, but do not boil. Over the enchiladas, pour the mixture.
Step 5: Place in the preheated oven and bake for about 20 minutes or until bubbly and heated through. Remove from the oven when done and sprinkle the rest of the Monterey jack cheese on top. Return to the oven and bake for another 5 minutes.
Step 6: Serve the enchiladas right away garnished with some cilantro and chopped green onions. Enjoy!
