Ingredients
2 eggs, beaten
1 cup granulated sugar
½ cup butter or margarine (one stick)
3 ripe bananas, very ripe are great
1 teaspoon baking soda
½ teaspoon salt
½ cup nuts – pecans or walnuts, chopped
2 cups all-purpose flour
How to make the best banana bread
Step 1: Using a beater, cream the sugar, salt, and butter or margarine. Once blended, add 2 eggs along with 3 mashed bananas. Mix well until combined.
Step 2: Sift the baking soda and flour into another bowl. Mix well.
Step 3: To the creamed mixture, add the dry ingredients and mix well until just combined. Then, fold in the chopped nuts.
Step 4: Into a greased loaf pan, transfer the batter. Place in the oven and bake for about 1 hour at 325 degrees until brown and a toothpick inserted in the middle of the loaf comes out clean.
Step 5: Remove from the oven when done, and drizzle a bit of powdered sugar frosting on top of the warm bread. Or spread a bit of butter on top.
Tips:
To make the powdered sugar frosting, mix 1 c sifted powdered sugar, ½ tsp vanilla extract, and 1 tbsp plus 1 tsp milk.
