This chicken burrito skillet is the newest addition to my favorite list! Super easy to make and ready in a snap. This skillet dinner is packed with chicken, black beans, zesty tomatoes, and taco seasoning cooked with brown rice. I am sure that this very delightful chicken burrito skillet will be a regular on our menu rotation!
This crowd-pleasing chicken burrito skillet is another perfect weeknight dinner idea! I already made this twice this week, and my family still cannot get over this delicious dish! INGREDIENTS
½ c. chopped yellow onion
1 lb. boneless, skinless chicken breasts, cut into bite-size pieces
2 tbsp canola oil
1 c. shredded Cheddar and Monterey Jack cheese blend
2 tbsp taco seasoning mix (from 1.25-ounce pkg)
1 c. water
1-¼ c. instant brown rice, uncooked
Chopped cilantro, optional
1 can (15 ounces each) Rosarita® Premium Whole Black Beans, drained, rinsed
1 can (10 ounces each) Ro*Tel® Original Diced Tomatoes & Green Chilies, undrained
HOW TO MAKE CHICKEN BURRITO SKILLET
Step 1: In a hot large skillet, add the chicken and cook for about 3 minutes over medium-high heat, stirring often. Then, add the onion along with the taco seasoning. Continue to cook for another 2 minutes. Next, add the black beans, undrained tomatoes, and water. Stir well and bring everything to a boil.
Step 2: To the skillet, add the rice and stir. Put the lid on and decrease the heat. Let everything simmer for about 7 to 10 minutes or until the rice is tender.
Step 3: Add half a c of cheese and stir.
Step 4: On top, sprinkle the rest of the cheese and cilantro (optional).
