This roasted citrus and herb chicken is a nice treat for all the citrus lovers out there! This is recipe is also perfect if you are torn between orange chicken and lemon chicken. Have both two worlds with this easy and quick recipe any time!
This dish has fresh slices of orange and lemon in the pan with chicken. For even more flavor, the entire dish is drizzled with citrus vinaigrette! Ingredients
¼ c. olive oil
4 cloves garlic, minced
3 to 4 pounds of bone-in chicken parts
2 oranges, sliced
1 onion, diced
½ c. fresh lemon juice
1 c. fresh orange juice
1 lemon sliced
½ tablespoon dried oregano
¼ teaspoon red pepper flakes optional
½ teaspoon paprika
Sea salt and freshly ground black pepper
2 to 3 fresh thyme sprigs
2 to 3 fresh rosemary sprigs
How to make Roasted Citrus And Herb Chicken
Step 1: Prepare the oven. Preheat it to 400 degrees F.
Step 2: Place the olive oil, garlic, orange juice, lemon juice, dried oregano, paprika, diced onion, red pepper flakes, salt, and pepper in a bowl. Mix well until combined.
Step 3: At the bottom of a baking dish, place half of the slices of orange and half of the lemon slices.
Step 4: On top, arrange the pieces of chicken. Then, season to taste.
Step 5: Place the thyme on top along with the rosemary and the rest of the orange and lemon slices.
Step 6: Then, drizzle with the orange-lemon juice mixture.
Step 7: Bake in the preheated oven for about 45 to 60 minutes, uncovered.
