Ingredients
Pastry:
½ tbsp cornstarch
⅓ c. powdered sugar
¾ c. butter, softened
¼ tsp vanilla extract
1 egg
1 ½ c. flour
Filling:
3 eggs
½ c. sugar
⅓ c. evaporated milk
¼ tsp vanilla extract
1 c. water
How to make Egg Tarts
Step 1: Cream the butter and powdered sugar using a hand mixer until fluffy and smooth. Add the egg and vanilla extract. Beat until well combined. Next, add the flour and cornstarch and mix them into the butter using a wooden spoon. To form a ball, knead the dough. For the dough to lose its stickiness, add more flour. Place the dough ball in the fridge for about 30 minutes.
Step 2: Bring the water and sugar to a boil until the sugar has dissolved. Then, set the simple syrup aside to cool at room temperature. Once cooled, stir in the eggs, evaporated milk, and vanilla extract. Then, strain the mixture two times and set aside.
Step 3: To about ¼-inch thickness, roll the cooled dough and slice into 4 ½-inch circles. Into a 3 x 1.5-inch tart tin (12 tart tins), lightly press the dough and place in the fridge while preheating the oven.
Step 4: Prepare the oven. Place the oven rack in a low position and preheat it to 400 degrees. Into the tart tins, pour the egg filling until about 80% full. Then, put the egg tarts in the preheated oven and quickly adjust the oven temperature to 350 degrees. Bake for about 30 minutes or until the filling puffs up. Decrease the heat to 325 degrees once the filling puffs up, and bake for another 15 minutes.
Step 5: Take the egg tarts out of the oven when done and pop them out of the tins. Serve the egg tarts warm. Enjoy!
