Ingredients
1 tbsp olive oil
1 lb lean ground beef
2 cloves garlic, minced
1 large onion, finely diced
1 whole green bell pepper, finely diced
4 oz. canned diced green chilies
1 whole red bell pepper, finely diced
14 oz. canned fire-roasted tomatoes
2 tsp chili powder
4 c. cheddar cheese, shredded
¼ c. parsley, chopped, for garnish, optional
1 tsp cumin
½ tsp salt
½ tsp ground black pepper
How to make Stuffed Pepper Dip
Step 1: Cook the ground beef and onions in olive oil in a large skillet over medium heat until brown. This takes about 15 minutes.
Step 2: Then, add the garlic along with the green and red bell peppers. Stir and continue to cook for another 5 minutes.
Step 3: To the skillet, add the fire-roasted tomatoes, diced green chilies, chili powder, cumin, salt, and ground black pepper. Stir well.
Step 4: Turn the heat off and let the mixture cool for about 20 minutes.
Step 5: In the meantime, prepare the oven and preheat it to 350 degrees.
Step 6: Add 3 c of the shredded cheese to the cooled mixture. Then, pour everything into a casserole dish. On top, sprinkle the rest of the 1 c cheese.
Step 7: Place in the preheated oven and bake for about 30 minutes.
Step 8: Remove from the oven when done and serve the Stuffed Pepper Dip right away with corn chips. Enjoy!
