INGREDIENTS
1 tbsp olive oil
6 cloves garlic, finely chopped
2 tbsp butter
26 oz. (750 grams) brown mushrooms, washed (pat dry with a paper towel)
8 oz. (250 grams) bacon, cut into strips
¼ c. dry white wine (or chicken broth/stock)
1 ½ c. (400 ml) heavy cream, (thickened cream or evaporated milk)
½ c. fresh shredded or grated mozzarella
¼ c. fresh shredded or grated Parmesan cheese
1 tbsp fresh chopped parsley
1 tsp fresh chopped thyme

How to make Creamy Garlic Mushrooms with Bacon
Step 1: In an oven-safe skillet, fry the bacon over medium heat until crispy. On a paper towel, transfer the bacon when done.
Step 2: Melt the butter in the same pan. Then, add the mushrooms and cook, scraping the bottom of the pan until the mushrooms are slightly browned and the juices have been released.
Step 3: Pour in the wine and broth. Allow everything to simmer for about 2 minutes until reduced, stirring often.
Step 4: In the meantime, prepare the oven and preheat it to broil.
Step 5: In the mushroom mix, stir in the garlic until aromatic. Then, add the herbs and cream. Adjust the heat to low and continue to simmer for another 4 to 5 minutes until the sauce has thickened. To taste, season with salt and pepper.
Step 6: Add the bacon and mix well. Over the mushrooms, add the mozzarella and sprinkle with the Parmesan cheese as needed.
Step 7: Place in the broiler or grill for about 3 to 5 minutes until the cheese has melted and bubbled and the mushrooms are cooked through.
