Chicken Bacon Ranch Potato Bake is one of my favorite potato and chicken recipe. An excellent bake to feed a crowd. Serve this as a hearty, filling main dish. This delicious Chicken Bacon Ranch Potato Bake is loaded with ranch-flavored chicken breast and bacon on a bed of roasted potatoes.
This Chicken Bacon Ranch Potato Bake is excellent for meal prep. The kids love this bake and this has been a regular in our menu rotation. A great Sunday brunch! And the leftovers are enough to serve 5 to 6 portions to enjoy the whole week!
Ingredients
3 chicken breasts, cubed
½ c. olive oil
14 medium potatoes, cubed
2 ½ c. shredded cheese
1 c. crumbled bacon
1 teaspoon black pepper
1 c. green onions, chopped
1 teaspoon salt
1 ranch dressing mix (dry powder)
How to make Chicken Bacon Ranch Potato Bake
Step 1: Prepare the oven. Preheat it to 500 degrees. Using cooking spray, grease a baking dish.
Step 2: Place the oil, pepper, salt, and ranch dressing mix in a large bowl. Mix well until combined. Add the potatoes and toss well.
Step 3: On the prepared baking dish, transfer the potatoes (only) and roast for about 1 hour, stirring every 15 minutes or so until crispy.
Step 4: Into bite-sized pieces, cut the raw chicken. Drizzle with oil and toss until completely coated.
Step 5: Toss the bacon, cheese, and onions until well mixed.
Step 6: Take the potatoes out of the oven when done and adjust the oven temperature to 400 degrees. Top the potatoes with cheese and raw chicken. Return to the oven and bake for an additional 15 to 20 minutes until the bacon begins to get a bit crispy and the chicken is completely cooked.
Step 7: Transfer to a wire rack when done and allow the bake to cool for about 10 minutes. Then, serve it with extra ranch dressing or sour cream on top. Enjoy!
