Ingredients
1 teaspoon vanilla
2 teaspoons baking powder
2 cups ap flour
4 tablespoons butter
4 eggs – room temperature
2 cups sugar
½ teaspoon salt
1 cup milk
TOPPING:
6 tablespoons evaporated milk
¾ cup packed, light brown sugar
1 ½ cups shredded coconut
9 tablespoons butter – melted
How to make Lazy Daisy Cake
Step 1: Prepare the oven. Preheat it to 350 degrees F. Ready a 13 x 9-inch pan. Grease and flour.
Step 2: Place the flour, baking powder, salt, and sugar in a large bowl. Mix well until combined.
Step 3: Heat the butter and milk in a medium saucepan over medium heat until the butter has melted. Then, add the vanilla.
Step 4: Beat the eggs and sugar using an electric mixer at medium-high speed for about 6 minutes until pale and creamy. Then, fold in the flour mixture using a rubber spatula.
Step 7: In the prepared pan, pour the batter. Place in the preheated oven and bake for about 30 to 35 minutes or until a toothpick inserted in the middle of the cake comes out clean. Remove from the oven when done and let the cake cool for about 10 minutes in the pan.
Step 8: To make the topping, place the butter, brown sugar, and evaporated milk in a medium bowl. Beat well until combined.
Step 9: On top of the cake, evenly sprinkle the topping. Broil for about 3 to 4 minutes or until the topping bubbles and starts to brown.
Step 10: Serve the cake warm. You can store any leftovers at room temperature for up to 4 days. Before serving, reheat in the microwave. Enjoy!
