This Boston Brown Bread is a rich, dense brown bread studded with raisins that will make you go back in time! My favorite on a cold Saturday night. Also, great to enjoy for breakfast with drizzles of maple syrup.
INGREDIENTS
1 egg
2 ½ c. wheat flour
2 c. buttermilk
1 c. raisins
½ c. molasses
½ c. sugar
2 ½ tsp baking soda
1 tsp baking powder
½ c. all-purpose flour
butter, garnish
1 tsp salt
1 c. water, boiling
How to make Boston Brown Bread
Step 1: Prepare the oven. Preheat it to 350 degrees F. Using a non-stick spray, generously grease 4 – 5 (15 ounces) cleared cans. Or a 9 x 5-inch loaf pan.
Step 2: In a medium bowl, place the raisins and submerge them in boiling water. Set aside for 10 minutes or until the raisins puffed up.
Step 3: In a large bowl, place the wheat flour, all-purpose flour, sugar, baking powder, and salt. Mix well, then beat in the egg.
Step 4: Combine the baking soda and buttermilk in another bowl. Add the molasses and stir well.
Step 5: Into the dry ingredients, fold in the wet ingredients, mixing until just combined. Then, add the plumped-up raisins and gently fold them.
Step 6: Into the prepared pans, pour the batter, filling each can only to half full. To remove any air bubbles, tap the cans on the counter. On a baking sheet, place the cans. On top, place a second baking sheet (optional). This will prevent the bread from baking too high.
Step 7: Put in the preheated oven and bake for about 50 minutes. Then, take the top baking sheet off and continue baking for additional 10 minutes or until a toothpick inserted in the middle of the bread comes out clean.
Step 8: Once done, take the baking sheet out of the oven. Cut around the edges of the can using a knife, then take the loaf out gently. On a wire rack, transfer the bread and allow it to cool.
Step 9: When ready, serve the Boston brown bread with cream cheese or butter. Enjoy!
