love this popular Thai street food. Pad See Ew is a Stir Fried Soy Sauce Noodles that is traditionally made with wide, thin rice noodles “Sen Yai”. For this version, I use dried rice noodles instead as Sen Yai is hard to find. But I promise you the flavor of this Pad See Ew would not be compromised!
Ingredients
NOODLES:
200 grams/7 ounces dried wide rice stick noodles, or 15 ounces/450 grams fresh wide flat rice noodles (Sen Yai)
SAUCE:
2 teaspoons white vinegar (plain white vinegar)
1 tablespoon light soy sauce (or all-purpose)
2 teaspoons dark soy sauce
2 teaspoons sugar (any type)
1 ½ tablespoon oyster sauce
STIR FRY:
1 c./150 grams/5 ounces chicken thighs (boneless, skinless), sliced
1 large egg
3 tablespoons peanut or vegetable oil, separated
4 stems of Chinese broccoli
2 cloves garlic cloves, very finely chopped
How to make Thai Stir Fried Noodles
PREPARATION:
Step 1: Trim the ends of the Chinese Broccoli and cut them into 7.5 cm or 3-inch pieces. Then, separate the leaves from the stems. In half vertically, cut the stems thick (no wider than 0.8 cm or 0.3-inch thick).
Step 2: Following the package directions, cook the noodles until al dente. Drain when done.
Step 3: Whisk the sauce ingredients until the sugar dissolves.
TO COOK
Step 4: In a very large, heavy-based skillet or wok, heat 1 tbsp oil over high heat. Then, add the garlic and cook for about 15 seconds. Next, add the chicken and continue to cool until mostly white.
Step 5: Into the skillet/wok, add the Chinese broccoli stems and cook until almost completely cooked. Then, add the Chinese broccoli leaves and continue to cook until wilted.
Step 6: Push everything to one side and crack the egg on the other side. Scramble the egg.
Step 7: Onto a plate, transfer everything, and set aside.
Step 8: On the stove, return the wok and add 2 tbsp oil. Heat the oil on high until it begins to smoke. Then, add the noodles along with the sauce. Stir well and cook for another 1 to 1 ½ minutes.
Step 9: Return the chicken to the skillet and toss well.
Step 10: Serve the Stir-Fried Noodles right away. Enjoy!
Notes:
I use Pad Thai noodles as this is the widest I can find. You can also use fresh rice noodles and prepare them following the package directions. If desired, you can also use other noodles such as fresh or dried, and rice or egg noodles
Feel free to use other proteins great for stir-frying such as tofu or prawns.
You can replace Chinese Broccoli with other leafy Chinese vegetables like Pak Choy or bok choy. You can also use broccolini and simply slice it in half lengthwise.
