This creamy lemon, garlic chicken has been my favorite for years! Tender and juicy seared chicken breasts smothered in a delightfully creamy, buttery lemon garlic sauce. I love serving this amazing chicken dinner with potatoes, rice, or pasta for an easy and fast weeknight meal any time!
INGREDIENTS
2 tbsp unsalted butter, divided
3 garlic cloves, minced
2 chicken breasts
2 tbsp olive oil, divided
¼ c. all-purpose flour, rice flour for a gluten-free option
1 shallot, chopped finely
½ lemon, juiced
1 tbsp lemon zest
⅓ c. heavy cream
parsley for garnish
½ c. chicken stock
½ tsp salt
¼ tsp black pepper
How to make Creamy Lemon Garlic Chicken
Step 1: In half lengthwise, slice the chicken breast. Sprinkle the pieces with salt and pepper, then dredge them in flour.
Step 2: In a skillet with 1 each of oil and butter. Then, add the chicken and sear for about 4 to 5 minutes on each side until golden brown and the internal temperature of the chicken reaches 165 degrees F. Onto a plate, transfer the seared chicken.
Step 3: Add more oil to the same pan. Then, add the minced garlic along with the shallots. Saute until tender and aromatic. Next, add the lemon zest, lemon juice, and chicken stock. Using a wooden spoon, scrape the bottom of the pan to release the browned bits. Let the mixture simmer for about 2 minutes.
Step 4: Stir in the heavy cream and add the chicken back to the pan. Cook further until heated through. Then, turn off the heat.
Step 5: Add the rest of the butter and allow it to melt.
Step 6: Serve the creamy lemon, garlic chicken right away garnished with some chopped parsley. Enjoy!
NOTE:
Feel free to use half-and-half or a mixture of milk and cornstarch if you prefer a lighter sauce. I use 1 ½ tsp cornstarch and half c milk.
