Are you in for a hearty and cheesy soup? Then, you are in for a treat! This potato kielbasa soup is the perfect lunch or dinner that is packed with cheese, crispy sausage pieces, and potato chunks! Incredibly easy to make using just a couple of simple ingredients and ready in under an hour! My favorite kind of soup that will stick to your ribs and surely warm your whole body!
Ingredients
1 lb kielbasa, cut into ½ inch pieces
2 garlic cloves, minced
1 tbsp olive oil
½ c. finely diced yellow onion
½ c. finely sliced celery (2-3 stalks)
½ c. peeled and finely diced (2 large carrots)
4 c. chicken stock
½ c. shredded Parmesan cheese
1 ½ lbs potato, cut into cubes
2 c. milk
2 c. shredded cheddar cheese
¼ c. chopped parsley
½ tsp kosher salt
¼ tsp black pepper
How to make Potato Kielbasa Soup
Step 1: Into a Dutch oven or soup pot, heat the olive oil over medium-high heat. Once hot, add the sausage and cook for about 5 to 6 minutes, stirring often. Using a slotted spoon, remove the sausage from the pot and set it aside.
Step 2: Into the same pot, saute the garlic, onions, carrots, and celery for about 2 minutes.
Step 3: Pour in the chicken stock and add the potatoes. Bring the mixture to a boil. Once boiling, decrease the heat. Put the lid on and continue to cook for another 15 minutes or until the potatoes are tender.
Step 4: Next, add the cooked sausage along with the milk, cheddar cheese, and Parmesan cheese. Season with salt and pepper. Stir well and cook for an additional 5 to 10 minutes over low heat or until the cheese has melted.
Step 5: Take the pot off the heat and serve the Potato Kielbasa Soup right away garnished with some parsley. Enjoy!
