I always love these little cheesy cakes. I have been making this for a long time. These fritters are easy to put together. This makes an amazing side dish. For this recipe, you are welcome to use canned or frozen corn. But I always prefer fresh corn in the summer. These corn fritters are a must-try and for a keeper!

INGREDIENTS
1 egg
2 c. of corn
¼ c. all-purpose flour
¼ c. cornmeal
1 tsp smoked paprika
1 green onion (chopped)
½ c. grated Parmesan, or cheese of your choice
1 tbsp lime juice
1 tbsp oil
1 handful of cilantro (chopped)
Sour or heavy cream, for garnish
Salt and fresh cracked pepper, to taste
How to make Cheesy Corn Fritters
Step 1: In a large bowl, place the corn, cornmeal, flour, paprika, egg, Parmesan, green onion, cilantro, and lime juice. Mix well until combined. If the mixture is too dry, you can add some water.
Step 2: In a pan, heat 1 tbsp oil. Once hot, spoon the corn mixture into the pan and shape it into patties. Cook for about 4 minutes on each side until both sides are golden brown.
Step 3: Serve the cheesy corn fritters right away garnished with a dollop of cream. Enjoy!
