Servings: 4
Total Cooking time: 60 minutes
Ingredients:
3 Tbsp butter
6 small potatoes, peeled & cubed
2 c. fully cooked cubed ham
¼ c. butter
3 tbsp all-purpose flour
1 small onion, chopped finely
1 ½ c. milk
¼ cup bread crumbs
1 (8 oz.) 1 (8 oz.) package of shredded Cheddar cheese
Salt and ground black pepper are two of the best ways to make it taste.
Directions:
Step 1: Place the potatoes in a large saucepan and cover with salt water. Bring to boil. Once the potatoes have boiled, reduce the heat to medium and simmer for 20 minutes or until tender. When done, drain.
Step 2: Prepare the oven. Preheat the oven to 350°F or 175°C. Prepare a 1-½-quart baking dish. Set aside.
Step 3: In a skillet, melt 3 tbsp butter over medium heat. After the butter has melted add the onion and ham to the skillet. Let the onions cook for 5 minutes, or until they become translucent and soft.
Step 4: Add the potatoes to the ham mixture. Place everything in a greased baking dish.
Step 5: Melt ¼ cup butter in a saucepan over medium heat. Next, add the flour and whisk until smooth.
Step 6: Slowly stir the milk into the flour mixture. Season the mixture with salt and pepper to taste. Stir for 2 minutes more until the mixture thickens. Next, reduce heat to medium and stir in the cheddar cheese.
Step 7: Pour the sauce over the potatoes and ham, and then sprinkle with breadcrumbs. Bake for 30 minutes in the oven, or until the sauce has thickened and the casserole is golden brown.
Step 8: When the casserole is done, take it out of the oven and serve it hot. Enjoy!
