This Chicken Bacon Ranch Potato Bake is a simple dish that is perfect for feeding the crowd. It is loaded with potatoes, chicken, bacon, and loads of melted cheese. To serve, I like to add ranch dressing or sour cream for a savory twist.
Ingredients
3 chicken breasts, cubed
½ c. olive oil
14 medium potatoes, cubed
2 ½ c. shredded cheese
1 c. green onions, chopped
1 c. crumbled bacon
1 teaspoon black pepper
1 teaspoon salt
1 ranch dressing mix (dry powder)
How to make Chicken Bacon Ranch Potato Bake
Step 1: Prepare the oven. Preheat it to 500 degrees. Using cooking spray, grease a baking dish.
Step 2: Place the oil, pepper, salt, and ranch dressing mix in a large bowl. Mix well until combined. Then, add the potatoes and toss to coat well.
Step 3: Into the prepared baking dish, transfer the potatoes. Place in the preheated oven and roast for about 1 hour, stirring every 15 minutes.
Step 4: Into bite-sized pieces, slice the raw chicken. Drizzle with oil and toss to coat. Add the bacon along with the cheese and onions. Mix well.
Step 5: Take the baking dish out of the oven once the potatoes are crispy. Then, adjust the oven temperature to 400 degrees.
Step 6: On top of the potatoes, add the cheese and raw chicken. Return to the oven and resume baking for another 15 to 20 minutes or until the bacon begins to get slightly crispy and the chicken is completely cooked. You can leave the baking dish in the oven for a few minutes more if the chicken is not fully cooked yet.
Step 7: Transfer the baking dish to a wire rack to let the dish cool for about 10 minutes.
