I miss the Outback Steakhouse Walkabout Onion Soup. I feel bad when Outback Steakhouse removed this from their menu. I am glad that I found this copycat recipe. I can recreate my favorite soup at home, easily and without a fuss. If you have not tried this simple recipe yet, you are already missing out!
Ingredients
2 tbsp butter
2 c. yellow sweet onions, thinly sliced
1 (15 oz.) can of chicken broth
2 chicken bouillon cubes
¼ c. Velveeta cheese, cubes, diced (compressed in measuring cup)
¼ tsp salt
¼ tsp fresh pepper, ground
1 ½-1 ¾ c. white sauce
3 tbsp butter
White Sauce
3 tbsp flour
1 ½ c. whole milk
¼ tsp salt
cheddar cheese, shredded (for garnish)
How to make Outback Steakhouse Walkabout Onion Soup
Step 1: Place the sliced onions and 3 tbsp butter in a 2-quart pan and cook over low heat until the onions are slightly clear and tender.
Step 2: Pour in the chicken broth and add the bouillon cubes, pepper, and salt. Stir well and cook until heated through.
Step 3: Next, add the Velveeta cheese and white sauce. Allow everything to simmer until the cheese has melted. Continue to cook for an additional 30 to 45 minutes.
Step 4: Remove from the heat when done and serve the Outback Steakhouse Walkabout Onion Soup right away garnished with parsley. Enjoy!
Tips:
To make the thick white sauce, place the butter and flour in a saucepan and cook over medium heat until the flour has thickened. Then, slowly pour in the milk, stirring constantly, until the mixture has a pudding-like consistency.
To prevent the white sauce from becoming lump is to keep stirring the white sauce. Then, quickly take it off the heat when done.
