This Tater Tot Casserole is an amazing recipe with ground beef and veggies in a delicious creamy sauce topped with golden tater tots. It is an excellent weeknight dinner perfect for the whole family! If you never have cowboy casserole, you are already missing out! This casserole is insanely delightful, family and kid-friendly, and one of the best casseroles you’ll ever make!
This casserole is an affordable dinner option. My favorite and go-to for years now. This cowboy casserole is also super quick to throw together, making this the perfect meal for super busy weekday nights. Incredibly great, even your picky eaters will devour this casserole!
Ingredients
½ onion, diced
1 lb lean ground beef (or ground turkey)
15 oz. can of corn – drained
1 c. shredded cheddar cheese
½ c. milk
½ tsp garlic powder
¼ c. sour cream
½ tsp onion powder
10.75 oz. condensed cream of mushroom soup (1 can)
20 oz. frozen tater tots (1 bag)
salt and pepper to taste
How to make Cowboy Casserole (Tater Tot Casserole)
Step 1: Prepare the oven. Preheat it to 375 degrees.
Step 2: Cook the beef and onion in a large skillet over medium heat until the beef is brown. When done, drain the excess grease. Then, add the corn, soup, ½ c. cheese, milk, sour cream, and seasonings. Stir well.
Step 3: Into a 9 x 13-inch baking pan, transfer the beef mixture. On top, place the frozen tater tots in a single layer and sprinkle with the rest of the cheese.
Step 4: Place in the preheated oven and bake for about 25 to 30 minutes, uncovered, or until the cheese is bubbly and the tater tots are completely cooked.
Notes:
For this recipe, you can replace canned corn with a can of green beans.
You can add 1 tbsp of Worcestershire sauce if desired. Add it to the seasonings.
