This Cape Cod Blueberry Pie changes everything! This pie is seriously delicious and looks very appetizing! It is loaded with fresh blueberries, which I love! Serve the pie chilled and topped with whipped cream for an amazing treat excellent for everyone!
Ingredients
3 tbsp all-purpose flour
Dough for single-crust pie
1 c. water, divided
¾ c. sugar
¼ tsp salt
6 c. fresh blueberries, divided
Sweetened whipped cream or vanilla ice cream
½ tsp white vinegar
How to make Cape Cod Blueberry Pie
Step 1: Roll the crust to a ⅛-inch thick circle on a lightly floured surface. Then, transfer the crust to a 9-inch pie plate and trim it to half an inch beyond the rim of the plate. Next, flute the edges. Keep the crust in the fridge for at least 30 minutes.
Step 2: In the meantime, prepare the oven and preheat it to 425 degrees.
Step 3: Using a double thickness of foil, line the crust. Then, fill with pie weights, dried beans, or uncooked rice. Place on the lower oven rack and bake for about 20 to 25 minutes or until the edges are golden brown. Take out the foil and weights and continue baking for another 3 to 6 minutes until the bottom is golden brown. Remove from the oven when done, and transfer the crust to a wire rack to cool completely.
Step 4: Place the flour, salt, and ⅓ cup water in a small bowl. Mix well until combined.
Step 5: Combine the sugar, 1 cup of blueberries, and the rest of the water in a saucepan. Bring the mixture to a boil, then whisk in the flour mixture. Return to a boil and continue to cook for an additional 4 to 6 minutes until the mixture has thickened, stirring constantly. Next, whisk in the vinegar and the rest of the blueberries.
Step 6: Pour the filling into the cooled crust and store the pie in the fridge for about 4 hours until the filling is set.
Step 7: Once set, slice the pie and serve with whipped cream. Enjoy!
Dough for single-crust pie:
Mix 1 ¼ c. All-purpose flour with ¼ tsp salt. Then, cut in half a cup of cold butter until crumbly. Next, slowly add 3 to 5 tbsp ice water, stirring using a fork until the dough holds together when pressed. Into a disk, form the mixture. Wrap and keep in the fridge for about an hour.
