Ingredients
½ c. diced prosciutto, bacon, or ham
A bag of mini sweet peppers
½ c. of frozen peas
¼ c. Boursin Garlic and Herbs
(spreadable cheese)
1 package of cream cheese
1 tablespoon freshly chopped chives
¼ c. shredded Parmesan cheese
How to make Stuffed Sweet Peppers
Step 1: In half lengthwise, slice the peppers. Scoop out the seeds using a spoon. Then, place the peppers on a cookie sheet, face-up.
Step 2: Combine the cream cheese with Boursin cheese, Parmesan cheese, prosciutto, and peas until well-mixed.
Step 3: Into the peppers, spoon the cheese mixture, and top each with chives.
Step 4: In a preheated 350 degrees oven, place the pan and bake the stuffed peppers for about 15 to 20 minutes or until golden brown. To brown the peppers more, you can broil them at the last minute of cooking.
Notes:
For this recipe, you can use different types of cheeses to mix with cream cheese. I prefer Boursin-flavored spreadable cheese as it adds another layer of flavor.
These stuffed sweet peppers are great to serve as appetizers.
