I love this Million Dollar Chicken Casserole! It is super easy to make using just a few simple ingredients. You can even prep this ahead and store it in the fridge or freeze it for an even quicker meal. This casserole is my go-to chicken casserole. This casserole tastes like a million dollars!
This chicken casserole is one of my family’s favorites. We make this all the time! It is delicious and great to pair with asparagus, green beans, or broccoli. This casserole is a family and kid-friendly dinner. And an amazing addition to your menu rotation!
Ingredients
1 c. cottage cheese
4½ c. chopped cooked chicken
4-ounce cream cheese, room temperature
½ c. sour cream
¼ teaspoon garlic powder
1 (10.5-ounce) can cream of chicken soup
¼ teaspoon dried onion powder
5 tablespoons butter, melted
1 sleeve of Ritz crackers, crushed
HOW TO MAKE MILLION DOLLAR CHICKEN CASSEROLE
Step 1: Prepare the oven. Preheat it to 350 degrees F. Using cooking spray, lightly grease a 9 x 9-inch baking dish and set aside.
Step 2: Combine the chicken with cream cheese, cottage cheese, sour cream, garlic powder, onion powder, and cream of chicken soup. Then, spread this into the greased pan.
Step 3: Mix the crushed crackers with butter, then sprinkle this on top of the chicken mixture.
Step 4: Place in the preheated oven and bake for about 30 to 40 minutes, uncovered.
Notes:
For a quick prep, you can use rotisserie chicken.
Make sure the cream cheese is very soft so it’ll be completely blended into the casserole. I suggest microwaving the cream cheese for 15 to 20 seconds.
If desired, you can prep this casserole until before baking and store it in the fridge or freeze it until ready to bake.
Thaw the frozen casserole before baking as directed.
You can use gluten-free Cream of Chicken soup and crushed pork rinds in place of Ritz crackers for a gluten-free version.
