My mom makes the best Beef Macaroni Soup. She passed down her recipe to me, and I am so grateful! My kids love their granny’s Beef Macaroni Soup. It is fully loaded with flavor, super easy to throw together, and quick!
This Beef Macaroni Soup is a very comforting, hearty soup made with tender veggies, leftover or fresh ground beef, canned tomatoes, elbow macaroni, and herbs & spices. A crowd-pleasing, family, and kid-friendly soup. Leftovers are amazing, too!
If serving right away, cook everything together. But if not eating in one sitting, I suggest cooking the pasta separately and just adding them to each bowl.
INGREDIENTS
3 cloves garlic, minced
1 tbsp olive oil
1 small white onion, diced
1 pound ground beef
3 c. beef broth
2 tbsp brown sugar
1 (14.5 ounces) can of diced tomatoes
1 (29-ounce) can of tomato sauce
1 tbsp Worcestershire sauce
1 tsp dried oregano
1 tsp dried basil
1 tsp dried thyme
2 c. elbow macaroni
2 bay leaves
How to make Beef Macaroni Soup
Step 1: Heat the oil in a large pot over medium heat. Once the oil is hot, add the onion and cook for about 5 minutes until tender and translucent. Then, add the garlic and continue to cook for another minute.
Step 2: To the pot, add the ground beef. Season with salt and pepper and cook further until the beef is no longer pink. If needed, drain the excess grease.
Step 3: Pour in the beef broth and add the diced tomatoes, tomato sauce, sugar, Worcestershire sauce, basil, oregano, thyme, and bay leaves. Stir well.
Step 4: Bring everything to a boil. Once boiling, decrease the heat and simmer for 10 minutes more.
Step 5: Add the macaroni, stir, and simmer for additional 10 minutes until the pasta is tender.
Step 6: As needed, adjust the seasoning.
Step 7: Serve the Beef Macaroni Soup hot. Enjoy!
