Tender and juicy chicken smothered in a delightful Dijon Cream Sauce! This chicken dish is an amazing weeknight dinner that you can easily and quickly make at any time. A great meal made with just a few simple ingredients. For a filling dinner, serve this dish with egg noodles or roasted veggies. And do not forget to spoon the incredible sauce over the chicken!
Ingredients
2 tbsp butter
2 tbsp olive oil
3 medium boneless, skinless chicken breasts
2 tsp Italian blend seasoning – OR Herbs de Provence
½ lb. baby potatoes – halved or quartered as needed (they should be no large than 1” pieces)
salt and pepper to taste
Dijon cream sauce:
1 tsp minced garlic
1 tbsp butter
2 tbsp Dijon mustard
1 c. heavy cream
1 c. chicken broth – I used low sodium
¼ tsp cracked black pepper – or to taste
½ tsp salt – or to taste
How to make Chicken and Potatoes with Dijon Cream Sauce
Step 1: Prepare the oven. Preheat it to 375 degrees.
Chicken and potatoes:
Step 2: In a large bowl, place the chicken and potatoes. Mix well and drizzle with 1 tbsp olive oil. Toss well and generously season with salt and pepper. Then, sprinkle in the Italian seasoning blend (or Herbs de Provence).
Step 3: Melt the butter in a large skillet over medium heat. Add 1 tbsp olive oil and stir.
Step 4: To the other half of the pan, add the chicken and the potatoes to the other side. Cook for about 3 to 4 minutes, undisturbed. Flip the chicken and continue to cook for an additional 3 to 4 minutes until both sides are browned. To a plate, transfer the chicken and potatoes and cover to keep warm.
Sauce:
Step 5: Melt the butter in the same skillet over medium heat. Once the butter has melted, add the garlic and cook for about a minute until aromatic.
Step 6: Pour in the chicken broth and add the Dijon mustard. Mix well, then stir in the heavy cream, salt, and pepper.
To assemble:
Step 7: In the pan, place the chicken and potatoes. Toss to coat and prevent them from drying out in the oven.
Step 8: Place in the preheated oven and bake for about 15 to 20 minutes or until the chicken is completely cooked and the potatoes are tender.
Step 9: Over the chicken and potatoes, spoon the Dijon sauce. Before serving, garnish with some freshly cracked black pepper and fresh herbs. Enjoy!
