Ingredients
1 ½ lbs lean ground beef
1 tablespoon olive oil
8 oz. uncooked Spaghetti noodles
2 tablespoons tomato paste
1 c. Fiesta Blend or Taco blend shredded cheese
1 can fire-roasted Rotel, with green chilis
Chopped green onions or parsley for garnish
1 packet Taco Seasoning mix
3 c. of water
How to make Taco Spaghetti
Step 1: In a deep pan, heat the olive oil over medium heat. Once the oil is hot, add the lean ground beef to the pan and cook until browned. When done, drain any excess grease.
Step 2: Into the pan with the ground beef, add the tomato pasta along with 1 can of Rotel and dry taco seasoning. Stir well, then pour in 3 cups of water.
Step 3: In half, bread the spaghetti noodles and add them to the water. Stir well and bring everything to a quick boil. Once boiling, decrease the heat to a simmer.
Step 4: Put the lid on and continue to cook until the noodles are al dente.
Step 5: Drain any excess liquid from the pan before adding the cheese on top. Cover the pan again and allow the cheese to melt.
Step 6: Before serving, garnish the taco spaghetti with some green onions and chopped tomatoes. Enjoy!
