I love gyro meat, and to be able to easily make this at home changes everything! This gyro meat has a distinctive flavor you usually find at Greek restaurants. It is made with a combination of ground beef and lamb with the texture of meatloaf.
Ingredients
Gyro meat:
2 large eggs
1 lb. ground lamb
1 lb. ground beef
2 tbsp bacon grease, OR butter
½ c. milk
2 tbsp lemon juice
1 c. Panko bread crumbs
1 medium onion, finely chopped
6 cloves garlic, smashed and finely minced
2 tsp black pepper
2 tsp dried oregano
1 tsp dried thyme
½ tsp dried rosemary
2 tsp dried cumin
1 tsp dried marjoram, optional
4 tsp kosher salt, yes, 4 tsp
To assemble:
2-4 tomatoes, sliced
1 batch of Tzatziki Sauce
1 large red onion, sliced thin
1-2 cucumbers, sliced
fresh dill, to garnish, optional
8-10 pita rounds
How to make Greek Gyro with Homemade Gyro Meat
Step 1: After making the Tzatziki Sauce, place it in the fridge to marinate while prepping the rest.
Step 2: Prepare the oven. Preheat it to 350 degrees F. Using parchment paper, line a rimmed baking sheet. You can also line the baking sheet with foil and grease it with nonstick spray.
Step 3: Place the onion and garlic in a food processor and pulse until finely chopped. Alternatively, you can use a sharp knife to finely chop the onion and garlic.
Step 4: Place the gyro meat ingredients (1 lb. ground beef, 1 lb. ground lamb, 2 tbsp butter OR bacon grease, 2 eggs, ½ c. milk, 2 tbsp lemon juice, 1 c. Panko crumbs, chopped onion, minced garlic, 4 tsp kosher salt, 2 tsp black pepper, 2 tsp oregano, ½ tsp rosemary, 1 tsp thyme, 2 tsp cumin, 1 tsp marjoram) in a large bowl. You can skip marjoram if not available.
Step 5: Using your hands, mix the meat. Into about 10 oval patties, form the meat mixture. On the prepared pan, line the patties, making sure they are not touching each other.
Step 6: Place in the preheated oven and bake for about 15 to 20 minutes or until the internal temperature of the patty reaches 160 degrees. When done, take the baking pan out of the oven and keep the patties warm.
Step 7: In the meantime, make the gyro toppings by thinly sliced 1 red onion, tomatoes, and cucumbers. In the microwave, warm the pita bread. If desired, chop some extra fresh dill.
Step 8: To assemble, add a layer of the Tzatziki Sauce to a warm plate. For easier eating, slice a gyro patty in half lengthwise and lay them over the Tzatziki. Before serving, garnish with red onion, tomatoes, cucumbers, and fresh dill. Enjoy with french fries or Greek salad.
