Delicious, super easy Chicken Alfredo Lasagna made with cooked and shredded chicken, Alfredo sauce, and mozzarella cheese. Creamy, incredibly cheesy, and a family and kid-friendly dish. Pair this scrumptious lasagna with a green salad and garlic bread for an easy, filling dinner that your entire family will love!
INGREDIENTS
3 c. cooked and shredded chicken
12-15 lasagna noodles
4 cloves garlic, minced
2 tbsp unsalted butter
1 small onion, finely chopped
4 c. heavy cream
15 ounces of ricotta cheese
1 ½ c. Parmesan cheese, freshly grated
1 tsp dried basil
4 c. mozzarella cheese, grated
10 ounces fresh baby spinach
Fresh parsley, minced, for serving (optional)
Kosher salt and freshly ground black pepper, to taste
How to make Chicken Alfredo Lasagna
Step 1: Prepare the oven. Preheat it to 350 degrees F. Using butter or nonstick spray, grease a 9 x 13-inch baking dish and set aside.
Step 2: Arrange the uncooked lasagna noodles in another 9 x 13-inch pan or another long and shallow dish. Over the uncooked noodles, pour the hot water until the noodles are submerged. Set aside and allow the lasagna noodles to sit for at least 30 minutes, stirring often using your hands to keep the noodles from sticking.
Step 3: Melt the butter in a large skillet over medium-high heat. Then, add the onion and cook for about 10 minutes or until translucent. Add the garlic and continue to cook for another 2 minutes. Next, add the spinach, stir, and briefly cook until the spinach has wilted.
Step 4: To the skillet, add the heavy cream along with the basil. Season with salt and pepper. Bring everything to a simmer, then whisk in the Parmesan and ricotta until melted. Add the chicken and take the skillet off the heat. You can let the mixture simmer for a couple of minutes more if it turned out too liquid.
Step 5: To the bottom of the prepared baking dish, add a spoonful of the Alfredo mixture, evenly spreading it out. On top, arrange a layer of noodles.
Step 6: Over the first noodles layer, spread about a third of the Alfredo mixture, then top with a third of mozzarella cheese. Do the same layers, topping everything off with mozzarella.
Step 7: Using foil, tent the dish. Place in the preheated oven and bake for about 45 minutes. Remove the cover and broil for about 2 to 3 minutes to brown the cheese.
Step 8: Remove the lasagna from the oven when done and allow it to rest for about 10 minutes.
Step 9: Serve the Chicken Alfredo Lasagna garnished with some fresh parsley if desired. Enjoy!
