It is seriously delicious, and the leftovers are wonderful, too! For this recipe, use some rotisserie chicken to make life easier. Cooked chopped chicken is what I normally use. Ingredients
2 c. cooked chopped chicken
1 (10.75-ounces) can of Cream Chicken Soup
2 c. water
1 (8-ounces) container of sour cream
1 c. shredded cheddar cheese
2 c. instant white rice
½ c. chicken broth or water
½ c. cooked chopped bacon
½ (1-ounce) package of dry Ranch Dressing Mix, ½
HOW TO MAKE CRACKED-OUT CHICKEN AND RICE BAKE
Step 1: Prepare the oven. Preheat it to 350 degrees F. Using cooking spray, grease a 9 x 13-inch baking pan and set aside.
Step 2: In a medium saucepan, bring water to a boil. Add the instant rice and turn the heat off. Allow this to stand for about 5 minutes or until the water has been absorbed by the rice.
Step 3: Place the chicken, chicken soup, sour cream, Ranch dressing mix, cheddar cheese, bacon, chicken broth, and cooked rice in a large bowl. Mix well until combined, then spread the mixture into the prepared pan.
Step 4: Place in the preheated oven and bake for about 20 to 25 minutes or until the cheese has melted and is bubbly.
