Beef Tamale Casserole is another easy and delicious weeknight meal with layers of cornbread, enchilada sauce, spiced ground beef, and tons of melted cheese. A very comforting, filling meal that not only tastes superb, but smells super amazing, too! I love to serve this beef tamale casserole topped with my family’s favorite toppings. Leftovers are also great and can be stored in the fridge for up to 3 to 4 days.
The best part about this recipe is you can tweak this according to your preference. Just do not be afraid to play around. Either way, you are guaranteed an absolute knock-out dish!
Ingredients
1 pound ground beef
1 (14.75 ounces) can of creamed corn
2 eggs
1 (8.5 ounces) pkg cornbread mix
½ c. milk
2 c. shredded cheddar cheese, divided
1 (1 ounce) package of taco seasoning
1 (10 ounces) can enchilada sauce
⅔ c. salsa
How to make Beef Tamale Casserole
Step 1: Prepare the oven. Preheat it to 400 degrees F. Using nonstick cooking spray, grease a 13 x 9 x 2-inch baking dish and set aside.
Step 2: Place the muffin mix, corn, eggs, milk, and 1 cup of cheese in a large bowl. Mix well, then pour this into the greased baking pan. Pop in the preheated oven and bake for about 20 minutes.
Step 3: In the meantime, cook the ground beef in a large skillet over medium heat until browned. Drain the excess grease, then stir in the taco seasoning packet and salsa. Continue to cook for another 5 minutes.
Step 4: Add the enchilada sauce. Stir well, then pour this over the cornbread. Sprinkle the rest of the cheese on top. Return to the oven and bake for 20 minutes more.
Step 5: Remove from the oven when done and let the casserole cool for about 5 minutes before slicing into 6 to 8 squares.
Step 6: Serve the Beef Tamale Casserole with your preferred toppings. Enjoy!
