INGREDIENTS
½ c. (1 stick) unsalted butter
4 thick slices of bacon, chopped
2 stalks of celery, diced
1 small onion, chopped
1 clove garlic, minced
2 tbsp flour
1 pound waxy potatoes, peeled and cubed
2 (6.5 ounces each) cans of chopped clams, undrained
½ tsp dried thyme
1 (8 ounces) bottle of clam juice
2-3 c. chicken broth or stock
2 c. heavy cream
Oyster crackers, for serving (optional)
Kosher salt and freshly ground black pepper, to taste
Fresh parsley, minced, for serving (optional)
How to make Easy New England Clam Chowder
Step 1: Cook the bacon in a large, heavy-bottomed pot over medium-low heat until crisp and just a little browned.
Step 2: To the pot, melt the butter, then add the onion, celery, and half of the potatoes. Cook for about 10 minutes or until the onions are translucent, stirring often. Then, add the garlic and continue to cook for another minute.
Step 3: Stir in the flour and cook for a minute more. Next, slowly whisk in 2 cups of broth. Add the rest of the potatoes and thyme. Bring everything to a boil. Once boiling, decrease the heat and simmer for about 10 to 15 minutes or until the potatoes are tender.
Step 4: To the pot, add the clam juice, along with the clams and cream. Stir well and cook for additional 5 minutes over medium heat. Be careful not to allow the mixture to come to a boil. To taste, season with salt and pepper. If you prefer a thinner consistency, add extra broth.
