This Drumstick Ice Cream Pie has been my favorite dessert since I was little. This pie has smooth and sweet vanilla ice cream with a crisp crunch of sugar cones, peanuts, and a hard chocolate shell. All the good things in a single pie – such a treat!
INGREDIENTS
6 tbsp butter, melted
12 sugar cones
2 ½ c. semi-sweet chocolate chips, divided
1-quart vanilla ice cream
½ c. heavy cream
½ c. chopped peanuts
6 tbsp coconut oil
How to make Drumstick Ice Cream Pie
Step 1: In a food processor, place the cones and finely ground them.
Step 2: Combine the crumbs with melted butter until well-coated. Into the bottom and up the sides of a pie plate, firmly press the mixture and keep it in the fridge while prepping the filling.
Step 3: Heat the cream in a medium saucepan over medium heat until it comes to a simmer. Take the pan off the heat and add half a c of the chocolate chips. Allow this to sit for about 5 minutes before whisking until smooth. Allow the mixture to cool for a little. Pour this over the cold crust and spread using a rubber spatula. Place in the freezer for about 30 minutes.
Step 4: Take the ice cream out of the freezer and let it sit for about 15 minutes. Into the pie shell, spoon the ice cream and smooth it out, molding a little in the middle. Then, return the pie to the freezer to set.
Step 5: Prepare the topping once the pie has hardened. In the microwave, heat the rest of the chocolate chips and coconut oil in 30-second intervals, stirring in between, until smooth and completely melted.
Step 6: Allow the mixture to cool slightly. Pour the ice cream over the pie and sprinkle with peanuts. Keep the pie in the freezer until ready to enjoy.
